2023 Chalk Hill Chardonnay
Tasting Notes
Our 2023 Chalk Hill Chardonnay, on the palate there is an acidic start, followed by a soft caramel finish- leaving you wanting another sip! This wine has elegance and beautiful complexity between the white peach notes and honey crisp flavors. We are so excited to share with you this Chardonnay. Ready to drink now, but will develop more over time.
Production Notes
Our 2023 Chardonnay is from the Sonoma Foothill Vineyard in the Chalk Hill AVA in Windsor. Our block contains Dijon clones 76, 95, and 96. After harvest, the fruit was sorted, then pressed whole-cluster using a Vaslin Bucher Bladder press for minimal oxygen exposure.
After pressing, the juice was cold-settled for three days, then inoculated with a proprietary yeast blend, and fermented in 50% new and 50% once-used French oak barrels. The wine also went through a partial malolactic conversion and was stirred sur lies to enhance the structure and body.
